These two sauces can be used harmoniously with pastas, bread, salads, chicken, and more. They can add a light, earthy taste to any dish and instantly transform it into a springtime treat.
Pesto Genovese
Ingredients needed include:
6 bunches of basil
2 cloves of garlic
¼ cup of pine nuts
¼ cup of grated Parmesan cheese
1-2 tablespoons of grated pecorino cheese (or parmesan cheese if preferred)
Salt
1 cup of Tuscan olive oil
First, place the basil, garlic, pine nuts, and salt in a blender and blend well. Pour contents into a bowl, add the cheese and oil, and mix together well until the sauce becomes creamy. Serve over any prepared dish.
Pesto Trapanese
Ingredients needed include:
2 cups of ripe red tomatoes
5 cloves of garlic
¼ cup of toasted and salted almonds
10 basil leaves
¼ cup of Tuscan olive oil
Salt and pepper to taste
First, crush and finely chop the almonds together with the garlic and basil. Coarsely chop the tomatoes and add to the mixture. Add salt, pepper and Tuscan olive oil. Prepare pasta, al dente, add the seasoning, and serve hot. Garnish with pecorino or Parmesan cheese. This sauce can be used on other dishes as well. However, it is traditionally used with pasta.
