Fans of chicken salad who have been driving to Amarillo can soon cut the trip, as Chicken Salad Chick has announced there will be two Lubbock locations soon, according to a company news release.
Just months after opening a location in Amarillo, franchisee Laura Garrison and her partner Moua Meng have signed an agreement to expand into Lubbock within the next five years. Addresses for the Lubbock locations have not been announced as of Tuesday.
Garrison is also the owner of multiple Taco Bell locations in Amarillo. During the June grand opening of the Amarillo restaurant, she mentioned she was drawn to Chicken Salad Chick due to the company's culture and food.
"If you are a chicken salad lover, we have everything for you, and if you want other options, we have like turkey sandwiches, clubs, salads and pimento cheese," Garrison said in a prior interview.

This news was part of an announcement for 21 locations opening between four franchise agreements, all of which are estimated to open within the next five years. Those agreements included:

11 locations in Austin, with franchisees Troy Morrison and Keaton Craig. Morrison has been a franchisee for Taco Bell and Wingstop locations. Morrison also signed on to add six locations to Oklahoma City.

Five locations across Longview, Greenville and Tyler, operated by Jack and Mona Gabriel. The couple opened their first Chicken Salad Chick in Tyler in 2023.

Three locations in Stephenville, Granbury and Abilene, operated by Mark Blessing. He has opened several Great Clips locations, and is a Granbury local.
